Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry overnight. De-pulped. Dry-fermented for 36 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

William Ortiz is one of the more exciting producers we have met recently, and this Pink Bourbon separation marks our first season including his coffee in our Huila project. In the cup we find pink lemonade, strawberry preserve, and soft florals.
